Edwin has shaped his culinary path around a clear conviction: fine dining only matters when it is honest, human, and deeply connected to those who gather at the table. His work blends contemporary fine dining technique with a living, respectful Latin American root, grounded in intention and care.

Founder of Edwin’s Organix, his first culinary venture, Edwin began by exploring a flexible, community-driven model through pop-ups, catering, and private dining experiences, collaborating with local spaces such as 7th Street Public Market and Poplar Tapas Wine & Spirits. From the beginning, his philosophy centered on organic ingredients, sustainable practices, and a plant-forward approach that naturally resonates with the vegan community without sacrificing depth, rigor, or flavor.

In 2022, he opened Arbol Eatery, his first brick-and-mortar restaurant in Uptown Charlotte, a breakfast and lunch space where healthy, Latin-inspired food is presented with clarity, warmth, and purpose. In parallel, Edwin developed Open Plan Kitchen as a more intimate and curated expression of his vision: a private fine dining experience where the kitchen is opened not as a spectacle, but as a philosophical stance.

For Edwin, opening the kitchen means opening knowledge.
It invites guests to observe, to ask, to learn, and to converse.
It is cooking with you, not for you.

His culinary style draws from his Mexican heritage while engaging contemporary techniques, from thoughtful reinterpretations of traditional dishes to elevated vegan cuisine. Abundance, in his view, is never excess. It is generosity with intention.

Beyond the table, Edwin is deeply engaged in the Charlotte community. He is currently a member of the board of Charlotte Wine + Food and has hosted numerous charity dinners and benefit events in collaboration with the organization. In 2025, he received the Bob Redd Award for Outstanding Culinary Industry Supporter for his philanthropic efforts supporting local children’s charities. He is also a recurring guest on programs such as Charlotte Today and QC Life, and collaborates annually with the Independence High School Culinary Program, sharing knowledge about indigenous and Hispanic cuisine with emerging chefs.
